Passover, Easter Treats Abound at Classic Cake

Looking for something sweet for the holiday weekend? Here are a few desserts to consider.

Easter and Passover—and the big family meals that go along with them—are one of the busiest times of the year for Classic Cake, with a few specialties you won’t find in other seasons.

Here’s what’s most popular for the spring holidays, according to manager Kristina Carr.

Chocolate Heaven

A flourless chocolate cake with nondairy whipped topping, this one flies out the door this time of year, Carr said.

“That is our biggest Passover seller,” she said. “It’s rich, it’s chocolaty and it tastes like a giant brownie.”

Strawberry shortcake

It’s simple, sweet and gets people thinking about warm weather after a long winter, Carr said.

“We do a regular version and we do a Passover version,” she said. “People like the lightness of it.”

Easter egg pound cake

Better come early if you want one of these—Friday’s stock of what Carr said is a huge Easter favorite was sold out by early afternoon.

“It’s traditional—my grandmom used to make one,” she said, though Classic takes it up a notch. “Ours is pound cake with fudge.”

Lemon poundcake and white chocolate mousse cake

Two new additions this year are already gaining popularity—maybe because the mousse has chocolate cookie crumble, vanilla cake, white chocolate mousse and raspberry mousse.

“That covers the bases of everything anyone could like,” Carr said. “You have vanilla, you have chocolate, you have fruit, so everyone has to like that one.”

Carrot cake

A staple of any bakery, Classic’s throws in nuts, pineapple and raisins along with carrot.

“We have pretty much everything in there,” Carr said. “It’s still a traditional thing, but our recipe’s really, really good.”

Zucotta

A dome of vanilla cake with whipped cream, chocolate chips, sliced almonds, bananas and strawberries, covered in fudge, this one is popular through the warm months, Carr said.

“We call that our banana split cake,” she said. “It’s pretty, so people like to take it to barbecues and things like that.”

Jewish apple cake

An ideal choice in the spring and summer, since it doesn’t need to be kept cool, Carr said this one’s popular as an alternative to some heavier desserts.

“People want something light, not something that’s doused in icing,” she said.

Key lime pie

As pies go, this one’s hard to keep on the shelves this time of year, Carr said.

“We’re selling a ton for Easter,” she said. “We have homemade whipped cream, and that’s the greatest thing on a pie.”

Sour cream apple walnut pie

Just a few spots over from key lime, this one takes the American tradition and puts Classic’s spin on it, Carr said.

“It’s a different twist on a regular apple pie,” she said. “It’s a little creamier, and it has the crumb topping, which people love.”

Chocolate forest

Not to be confused with a Black Forest cake, this one is straightforward, but something people always want, Carr said—it’s a simple combination of chocolate cake, chocolate mousse and chocolate ganache.

“Who doesn’t love something all chocolate?” she said. “That’s one of our most popular year-round.”
